People often ask me how I cook such impressive meals for my son for every meal. The truth is, I don’t! Often, Harry has meals that are prepared in under 10 minutes and causing as little washing up as possible. If I’m honest, I’m a really lazy cook, I’ve just figured out a few tricks to help me cheat my way through feeding my child a healthy, balanced diet. In this post, I’ll share with you some of my top tips for preparing minimal effort, healthy meals for your baby or toddler and a few 5 minute meal suggestions!
Lazy Mummy Top Tips:
I like to batch cook at the weekends whilst my husband is home. Making things like savoury muffins, pizza pinwheels and cheese and lentil slices for the freezer makes midweek meals a really simple job of defrosting and reheating. At the weekend we also like to cook things like chicken curry, spaghetti bolognese and meatballs in large portions so we have enough to freeze enough for another two meals for our family. Another thing we like to make in bulk is our own healthy alternatives to freezer favourites like fish fingers, fishcakes and chicken nuggets. This means we know exactly what is in our food and can still enjoy the quick convenience of having them in our freezer.
We like to fill our freezer with frozen vegetables. They are just as healthy and delicious as fresh but mean less preparation time and less waste!
We also like to buy pre prepared salad and vegetables sometimes when they are on offer at the end of the day.
I’ve also been known to use frozen mashed potato before and love to have it in the freezer for when I’m in a hurry. Cheesy mash and beans is one of Harry’s favourite meals and frozen mashed potato means we can prepare this in the microwave in minutes!
Let your slow cooker do the work
We love our slow cooker! It is so handy to be able to spend 5 minutes in the morning throwing some ingredients in there, enjoying our day and then coming home to a delicious meal ready to be served. Our favourite slow cooker meals would have to be beef casserole and minted lamb.
Some of the simplest meals to prepare are Harry’s favourites! These are some of his most loved meals that I can make in under 10 minutes!
Tortilla Pizza – Faster to prepare than cooking a frozen pizza and mich healthier too! I can’t wait until Harry is older and can help to make these and choose his favourite toppings himself!
Pasta and pesto – Throw the pasta in a pan of boiling water, 5 minutes before it’s cooked add some frozen vegetables, drain and stir some pesto through then sprinkle cheese on top! (Ok, so that’s slightly longer than 5 minutes but you can speed it up by using fresh pasta or gnocci instead!)
Mashed potato, cheese and beans – Use frozen mashed potato, put it in the microwave until defrosted (1 minute ish), stir through milk and butter, return to the microwave with the beans.. voila! super quick and easy!
Satay Noodles – Another ‘all in one pan’ meal!
Banana and peanut butter pancakes – Only three ingredients and ready in a flash! We like to serve these with mixed berries for breakfast.
Salmon and vegetables – Put a piece of salmon on a microwaveable plate and cover with clingfilm. Cook in the microwave for approx. 3 minutes until cooked. Whilst the salmon is cooking boil or steam frozen mixed vegetables. You can serve with mashed potato, new potatoes, noodles… anything! (But the potatoes would take longer than 10 minutes so I’m leaving that as optional!)
Pasta in tomato sauce – Sometimes you can’t beat the simple things in life! Harry loves pasta in tomato sauce and I love how easy and quick it is to prepare!
Omelette – Harry loves an omelette! I like to throw some courgette and peppers in there too and serve with a side salad.
